I recently started seeing someone who has Irritable Bowel Syndrome, a seafood allergy and Acid Reflux. He can't eat many of the foods I love cooking such as Mexican, Seafood, traditional Italian sauces that are acidic, pizza and things like that. He doesn't like potatoes. Weird I know. I know he likes meat, noodle dishes (with what sauce I don't know), and salads. I want to make him dinner and I really like to cook but I don't want to make something bland because of his conditions. And I eat really healthy and need to stick with that. Any ideas?

If you're committed to cooking for him, you need to learn the "rules " of eating for IBS. Soluble fiber at every meal and whenever his tummy is empty. Cook insoluble fiber well and puree or chop it so the bowel has less work to break it down, Total fat intake should be less than 25% and should focus on heart healthy fats. Never let him eat fat on an empty stomach. The IBS triggers include red meat, egg yolks, dairy, wheat, and a few others... you can find lists at both the websites I've posted. Has he ever been tested for food intolerances? There are some great supplements out there that can help him, too. Do some research and you'll find it's not that difficult... just takes some planning.
